It's so easy to personalize your soaked oat breakfast! Choose your berries, decide between a dash of cinnamon or vanilla and maybe even add some dried fruit. Make it the night before if your mornings are rushed!

Ingredients

2 tablespoons chia seeds
1/2 cup rolled oats
1 cup unsweetened soy, hemp or almond milk
1/4 teaspoon cinnamon or vanilla bean powder, optional
1/2 cup blueberries, blackberries, raspberries or sliced organic strawberries

Instructions:

In a small bowl, stir together the chia seeds, oats, non-dairy milk and cinnamon or vanilla if desired. Soak for at least 30 minutes or refrigerate overnight.

Before serving, mix in berries and if desired, additional non-dairy milk.

I batch prep a version of this in mason jars for a reach in and grab morning meal. It is so filling, I don't think about food until lunchtime (that is huge for me these days). I often leave out the banana, but pack it with berries, sometimes some peanut butter powder, sometimes a little maple syrup or raisins for sweetening. It keeps iin the fridge for several days.

You can just leave out the banana or substitute 1-2 tablespoons raisins or chopped dates.

My favorite breakfast!  However...I really love sweet in the morning so I add 1 ts of St. Dafour jam.  It has no added sugars or salt and very yummy!

Really good and filling.
