No Bake Brownies

Ingredients

1/2 cup raw almonds
1/2 cup raw cashews
1/4 cup hemp seeds
3/4 cup walnuts, divided
2 cups Medjool dates, pitted
1/2 cup unsweetened cocoa powder
1/3 cup natural, no-salt-added peanut butter
2 tablespoons cocoa nibs

Instructions:

Line a baking pan (an 8x8 inch pan works well for 16 servings) with parchment paper.

Place the almonds, cashews, hemp seeds and 1/2 cup of the walnuts in a food processor. Process until finely ground. Add the dates and process until mixture is paste-like and begins to form a ball. Add the cocoa powder, peanut butter and cocoa nibs and process until well-combined.

Press mixture evenly into pan. Coarsely chop the remaining 1/4 cup of walnuts. Sprinkle on top of the brownies.

Refrigerate for 1 hour. Cut into 16 pieces.

I have made these many times before, as well as the black bean brownies, and I like these better.  This time, I soaked the dates in boiling water about 5 mins. and melted the cacoa nibs a little before adding to the mixture.  I always have used my 11-cup food processor to make these.  I freeze about 1/4 batch, but it never lasts in the freezer more than a few weeks! They are my favorite "brownie."  I often have one for breakfast , broken into little pieces, with strawberries.

I am new to this site and made this recipe today. I did make a big mess in the kitchen but boy were they delicious! Very moist and great chocolate flavor. I did use cacao nibs. I probably should not have made these as I still have a lot of weight to lose. My sweet tooth made me make them..lol. I will definitely limit myself to one a day. I wonder if they freeze well. Has anyone done that?

Great chocolately treat!  These have become a staple in our house.   The cocoa nibs and the walnuts on top give them great texture.  I would not try to use a blender, as I have seen in some of the comments.

This recipe was a kitchen diaster!  Vitamix, small blender, 2 big bowls, lots of measurimg cups!  It was a mess to make and not worth that much effort.  If you think you can blend almonds, cashews, walnuts and hemp seed into a powder... I would like to know how you did it!!  It was too wet to do that...Better than this look up Kris Carr raw protein energy balls.  Easier to make and really good!

Yes, I have made Kris Carr energy balls many times and much easier to make and really good.  She addes vegan chocolate chips and those really get my sweet tooth going!  I was eating too many of them!  I get Frooze balls from amazon, used to sell them at Trader Joes but not anymore.. and I get Dr. Fuhrman's pop'em's, they are pricey but good!

The Vitamix is a blender. You need a food processor for this recipe.

These are delicious. I had to switch from making them in the Vitamix to a small food processer that was a bit to small.

I emptied them into a bowl and stirred in a bit more PB to help make them more cohesive. 

I am hoping the grandchildren will love them as much as I do so I don't eat them all!

I thought these were fabulous as the recipe was written. I followed the example of someone else and cut up the dates and then soaked them in a little boiling water before putting them into my 5 cup Kitchenaid food processor and it did fine with the mixture. My only problem was limiting myself to one of these per day.

I would welcome any info on how people are incorporating these into their diets: breakfast, snack, dessert? Also, who is eating them: athletes, non-dieters, etc? Thanks!

Yeah, nobody should be eating them if they're on a weight loss mission. They're only supposed to be an occasional treat not something they "incorporate into their diets". People with "sweet tooths" and addictions need to stay far away.

This is GOOD! I will be making this recipe all the time. It is so chocolately and delicious.

My notes:

I used 16 medjool dates which is less than 2 cups pitted. I didn't want it to be terribly sweet. I use the Costco medjool dates which seem to be bigger and gooier than some others I have seen.

I used 1/3 cup unsalted peanuts instead of peanut butter and left peanut chunks in my dough. Super yum.

I did not have cocoa nibs and I made no substitute for that missing ingredient.

I used a Cuisnart food processor with the s-blade, not the Vitamix, which I think you would want to do since the Vitamix would very likely create a nut butter. The texture I was going for was not fudge, but date-nut ball type of texture.

I cut my pan of brownies into 64 even pieces so I could just have a quick little bite size piece when I wanted a chocolate hit. That was perfect for me.

I highly recommend this recipe. Thank you for posting this delicious idea. No-bake is wonderful. So easy. I'm going to go make it again right now!

LOVED this!  Didn't use the cocoa nibs because we didn't have any.  Also, used half the cocoa powder (just our preference).  Usually double the recipe so we don't run out! :)

Didn't have cocoa nibs so used extra cocoa powder. With all dry ingredients, impossible to get everything pulverized, so added some almond milk. It was okay, but nothing like brownies in taste or texture.  Not a repeat.

OMG don't destroy your Vitamix for this. Just do your nuts in the blender and the rest in a bowl by hand. My food processor is a KitchenAid.

my vitamix did the same thing!  It smelled like something was burning and then it stopped working.... what a mess.  I finished the process by hand, waiting the hour in the fridge... don't have a food processor.  next time I will do it in a bowl by hand.  Even the nut mixture got glued to the bottom and stopped the vitamex from running!

How do you process this in a food processor without it overheating?  I got as far as adding the dates and they stuck under the blades, so I removed them and cut them into smaller pieces but it's still overheating my (old) cuisinart.  Do I just need a more powerful machine?  I'm waiting for it to cool to see if processing half the recipe at a time works better ...

It was delicious pretty much as written!  cutting up the dates into smaller bits and then processing the nuts & date combination is half batches worked great and my old cuisinart food processor did not overheat again.  The end product was worth the effort.  So rich, the recipe will last me a long, long time!

YUM! This saved me from raiding my husband's chocolate stash. It is rich and chocolatey. I didn't have enough peanut butter, so I added casher butter to make up the difference. Oh, I forgot to add the chopped nuts. Perhaps I'll add peanuts instead of walnuts. Anyway, another successful Sugar Free day when my sweet tooth was trying to take over! I won!

Are there recommended substitutions for those of us with nut allergies?  I'm allergic to walnuts and peanuts.  For the peanut butter I'd substitute sunbutter.  However, I'm uncertain of how to substitute the walnuts.  I'm looking forward to your suggestions!  Thanks in advance.

Re walnuts- if you can eat pecans they would be a tasty substitute (but wouldn't provide as much omega oils).  If you wish a totally nut free recipe take a look at the 'Amazing Chocolate Balls' recipe which uses dates, coconut and oats as the base.  You could press them down like brownies instead of balls and use the sun butter. Just made this - veeeery chocolatey! Delicious - thank you!

Not sure why you're uncertain about substituting one nut with another nut. You can substitute whatever nuts and seeds you're not allergic to. What about macadamia, pecans, cashew (not much flavor), Brazil etc? For the peanut butter  you can substitute almond butter or any other. It's basically just glue.
