Buckwheat and Berries Cereal

Buckwheat is not related to wheat—it is actually a nutrient-rich, gluten-free seed. It gives this tasty breakfast a nice chewy texture and slightly nutty flavor.

Ingredients

1/2 cup raw buckwheat groats, rinsed (see note)
1 cup unsweetened soy, hemp or almond milk plus extra if desired
1/2 teaspoon cinnamon
1/2 teaspoon pure vanilla bean powder or alcohol free vanilla or almond extract
1 medium apple, chopped or grated
1 tablespoon raw almond butter or cashew butter
1 tablespoon chia seeds
1 cup fresh or thawed frozen berries and/or 1 banana, sliced

Instructions:

Place buckwheat, non-dairy milk, cinnamon and vanilla in a pan, Bring to a boil, reduce heat, cover and simmer for 6 minutes or until groats are soft but not mushy and almost all liquid is absorbed. Stir in apple, nut butter and chia seeds and simmer for another minute.

Stir in berries and/or banana. Add additional non-dairy milk and top with chopped nuts if desired.
May be refrigerated and eaten cold or reheated. If using banana, add right before serving.

Note: Buckwheat groats are seeds from the buckwheat plant. They are unrelated to wheat and do not contain gluten. Choose raw buckwheat groats, not kasha, which is toasted.

I am allergic to buckwheat.  What can I use in place of the buckwheat groats?  Would old fashioned rolled oats be okay?

I buy roasted buckwheat called kasha in Russian stores. It is good quality and very tasty. But I wonder what nutrients are lost because of roasted groats.

Outstanding. I cook mine in microwave, use mostly water with a dash of non dairy milk for the creaminess. It adds variety instead of steel cut oats for breakfast. Recipe as stands makes 2 servings for most people (1 cup) so I half the recipe when I make it. Though I could save leftovers for the next day.

I cook my buckwheat groats in my instant pot on manual for 4 minutes.  I use 1 cup of buckwheat and add  2 cups of water.  It makes 5 or 6 servings.  I add everything to the buckwheat after it is cooked, ie, fruit, nuts, milk etc.

Delicious, stick to your ribs breakfast. The almond butter is genius.  I doubled it and have been eating it reheated every AM with almond milk.

One cup of buckwheat groats add two cups of hot water. Let sit overnight. In the morning add fruit for a healthy filling breakfast.

Very satisfying. Probably should add a little more non-dairy milk and cook the buckwheat a little longer than called for in the recipe.
