Herbed Tomato and Cheese Tarts

These "tarts" feature a non-dairy goat cheese made with tofu, cashews and fresh herbs. It’s a perfect complement to the garden-fresh tomatoes and peppery arugula.

Ingredients

3 large 100% whole grain wheat tortillas
12 ounces baby arugula
2 pounds assorted heirloom tomatoes, sliced
2 tablespoons basil, chopped
For the Herbed Goat "Cheese":
2 packages (12.3 ounce) extra firm lite silken tofu
1 cup raw cashews, soaked in water overnight, then drained
2 tablespoons hemp seeds
1/3 cup freshly squeezed lemon juice
1 teaspoon reduced sodium white miso
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh basil
1/2 teaspoon dried tarragon
1 shallot, minced

Instructions:

To make the Herbed Goat "Cheese":
Place 18 ounces of the tofu, the cashews (drained), hemp seeds, lemon juice, miso, and nutritional yeast in a food processor and process until very smooth. Add the remaining tofu and pulse for a few seconds, leaving some texture, similar to goat cheese. Transfer mixture to a bowl and stir in the minced shallot and herbs. Taste and adjust with more lemon and nutritional yeast to taste. Cover and place in a warm spot in your kitchen to "age", for 2-4 hours.

To assemble the tarts:
Toast tortillas in a 350 degree F oven until crisp, about 8 minutes. Spread 1/4 inch of cheese on each tortilla leaving a little edge. Add a layer of baby arugula, then arrange sliced heirloom tomatoes on top of the arugula and sprinkle with the basil. Cut each tortilla into 6 slices.

Has anyone tried putting the cheese on the tortilla and baking it in the oven? I am not fond of having uncooked tofu because of possible contamination.

Finding the 100% whole wheat wraps is a challenge.  The size Large is like women's clothing, Size 12 J. Jill or Target size 12?  I am having an issue with exact portion size across the board.  I think I want a scale , measuring tape, and individual measuring cups.  For me this means  the 12 inch burrito wraps that I have only seen from Lavash and at the Mexican grocer in white.  "Whiter the bread, the quicker you're dead." So says Dr. Furman.  I say "Wipe the white, with the bathroom mirror"  Just skip it if you can't stock the 100%  I am considering asking local bakers to make me some or some with cauliflower. Its that hard to find.  The pretend whole wheat ones - read the label.  I find letting spice sit over night best with silken tofu "cheese" blends.  You can mix more that "cheese." I would do one with fresh peppers . And a relish of  flesh part of heirloom tomatoes.  I don't like tomato seeds or skins. It seems like you must make recipes with a meal plan in mind or its work.  Like it, big batch, left overs.

I thought this was fabulous. I use it on wraps and sandwiches and also as a dip for veggies. It's delicious! Definitely 5 stars!

In the repertoire at my health food store silken tofu and firm tofu are two different items. Does it really mean firm lite silken?

This recipe is too bland.  A tart?  Really?  No.  Cheese?  Nope.  None of that either.  Just another misnamed recipe.  This is one of my biggest frustrations with this program.  Naming things that sound good but don't resemble the real thing at all.  This recipe isn't bad, but it isn't a cheese tart either.  It needs another flavor to give it more depth.  I'm not sure what yet.  I'll keep thinking about it.  It does have possibilities if it wasn't so bland.

The cheese in the title is refering to the herbed goat "cheese" made in the recipe.  It's a substitute for actual dairy cheese, and cheesy in flavor.  The tart part, I understand.  I would try this recipe with a more tart like base, like the crust used in the Sausage and Greens Pie.  It's a great base for many things like this.

Can't wait to try this recipe however, I can't tolerate any grains so I'm going to try on a roasted portabella mushroom. I also just saw a recipe where someone used roasted giant zucchini slices as the base for individual pizzas and that would probably work here too.

Valerie-the tortillas we used at the getaway were the Ezekiel brand 100% whole sprouted grain tortillas, not corn.
Claudia-the portions here are flexible depending on how many tarts you are making. 12 oz. of arugula is probably better suited for 6 tortillas.
George-these actually cut rather easily with a pizza cutter or large chef's knife after the toppings have been put on

I believe that the Recipe is to crisp the tortillas before any toppings on..... :)
Then, add toppings.

This recipe sounds interesting. I am not sure however, how to cut the crisp tortillas with the topping so they do not crumble. Please enlighten.
