Autumn Salad with Walnut Dressing

Visit your local farmers' market to stock up on ingredients for this fall-inspired salad. It features crisp apples, sweet pears, toasted pumpkin seeds and a colorful assortment of lettuce and radicchio.

Ingredients

For the Dressing: (see note)
1/4 cup balsamic vinegar
1/2 cup water
1/4 cup walnuts
1/2 cup raisins
1 teaspoon Dijon mustard
1 small clove garlic
For the Salad:
5 cups mixed salad greens
5 cups chopped romaine lettuce
1 cup sliced radicchio
1 large ripe pear, cubed
1 large Granny Smith apple, chopped
1/2 cup thinly sliced red onion
1 tablespoon raw pumpkin seeds, lightly toasted

Instructions:

Combine vinegar, water, walnuts, raisins, mustard and garlic in a high-powered blender.

Combine salad greens, romaine, radicchio, pear, apple and onion. Drizzle with desired amount of dressing and toss well to coat. Sprinkle with pumpkin seeds.




Note: For your convenience, Dr. Fuhrman makes a line of healthful bottled salad dressings. Dr. Fuhrman's Walnut Vinaigrette Dressing (about 1 cup) can be substituted in this recipe.

I found the amount of red onion, Dijon mustard and garlic too strong. Recommend cutting their amounts down by half.

I made this salad but modified with what I had on hand. The dressing was very good. I substituted apple cider vinegar and powdered mustard. It was delicious, I think that I ate too much though.

Can someone help me understand how to measure 5 cups of leafy green vegetables? Do you compact them for the measurement?

According to cook it simply dot com a cup of greens equals 75 grams. I agree it is confusing. I wish recipes would just use grams it would be much more accurate way to measure.

Excellent question!  I was following a Fuhrman recipe and in one book it called for 5 cups greens and in another book, the same recipe called for a pound and half of greens.  Two completely different measurements! #confused

One of my new favorites! It's a little more tart than the apple bok choy salad, which I also love. The dressing is delicious and can be used with anything. I didn't have some of the greens it called for so used mixed salad and it turned out fine. I also used a sprinkle of dry ground mustard instead of Dijon. This one's going into permanent rotation!

This is excellent! I didn't have regular balsamic vinegar, so I used cherry balsamic. It was delicious. I also added avocado and my husband loved it! It is definitely one of my favorite salad dressings. Oh, I left out radicchio....not a fan at all.

I am just getting started on this plan. I have never liked greens but decided I'm going to follow the guidelines even if I don't like anything I get to eat. This is the first recipe I picked off the website. I have never liked mustard (yes, I'm a picky eater) but I decided to follow the recipe exactly. Surprise! It was excellent! I'm very happy and looking forwad to trying more new dishes!

I made this salad dressing and used pomegranite balsamic vinegar and it turn out wonderful. Best salad dressing so far I have found on this site.

This is one of my top 10 favorite salad and salad dressings. Sometimes I mix up the veggies but I always use arugula and some sort of fruit on top such as pears, apples or even fresh cranberries. The dressing is delicious. I served this to 6 friends the other week and non of them eat this way at all and they loved it! FYI unless you plan to serve this to a group of 10, cut the recipe a lot because it makes a whole lot!

I agree with llegg, it was very good. My husband and I made it just yesterday. What a quick easy work day meal that made for a satisfying dinner. We did have a piece of Gluten Free Artisan Bread which I baked fresh this weekend. This was a crusty boule recipe from HB5 which I added nutritional yeast to, and oh my, did it turn out yummy. Don't hesitate to make this salad
