Pumpkin Pie Smoothie

Here’s a fun idea: pumpkin pie in a glass. Enjoy it for breakfast or even dessert. Since pumpkin is packed with antioxidant-containing carotenoids, it’s nutritious as well as delicious!

Ingredients

1 cup unsweetened vanilla soy, hemp or almond milk
1 banana, peeled and frozen
2 medjool or 4 regular dates, pitted
1 cup pumpkin puree
2 cups kale or spinach
2 cups romaine lettuce
1/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg
2 ice cubes

Instructions:

Place all ingredients in a high-powered blender. Process on high until smooth and creamy.

Made w/ mesclun -- don't recommend mesclun, as the taste had a strong muddiness, overpowering the sweet tones of the smoothie. Used a bit of pistachio butter adding creaminess. Greener than photographed.

I made this and thought it was delicious. I just prepped a bag for the freezer. But the ingredients are different on the 10 in 20 plan; 2 c kale, vs 4 cups of greens; less milk, banana. Not sure why. But it was very good

I've made something similar for years. Try using pecans and water instad of the almond milk that's full of junk.

We love this and make variations of it regularly. My grandchildren especially love it. We always freeze the pumpkin first and eliminate the ice cubes. It is nice and thick that way. It is also a nice change up to add cocoa powder for a chocolate taste. Mmmmmmm.

I thought this was pretty good, although even with only 1/8 tsp nutmeg it seemed a bit strong to me. I can't imagine why anyone thought this was sweet with the full amount of dates as I didn't find it to be particularly sweet at all when using 4 honey dates. Of course if some people are using Medjools instead of the regular size of date then it would be about triple the sweetness, and then I imagine it would be too sweet.

This is our favorite smoothie - basically its our daily breakfast most days. We sub frozen mango or apple for the banana since my husband is allergic and the taste is fine. We also add ginger and sub kale for the greens to up the nutrition. Tastes great!

Excellent. Have made it twice this wee, The pumpkins that I bought the second were a bit meaty and I had to actually thin it with more almond milk. Tastes jJust like pumpkin pie filling

Wow, this was good but I have to admit we used half coconut milk and half almond to make the consistency thicker. Then chilled in dessert cups and ate it as a dessert. It was super yummy and I can see how you could use this thicker version as the filling for a chilled nutritarian pie. Can't wait to try that too.

Wonderful recipe! I've made this several times and also give my pup some of the leftover pumpkin. I make it pretty much as written except for the addition of a dash of cloves and more ice. I've found that you can cut the amount of dates in half if you have a very ripe banana...otherwise I use the full number of dates.

I think this is delicious. Next time I think I would add 2 more ice cubes. I used a bit of pumpkin pie spice and a dash of cinnamon. Very good. Nice for the Holidays.

A little sweet-maybe only 2 dates instead of 4 would be better. Otherwise, tastes like pumpkin pie. This will be one of my new fav fall dessert smoothies!

I like this better than pumpkin pie and it's so quick to make (assuming I already baked the pumpkin or have a can of it ready). I skip mace/nutmeg because I am not too fond of those spices.

This was really good! Tastes just like a cold pumpkin pie. We put crushed cashews on top. It would be great made into an ice cream pie!
